New clients are always asking how I prepare fish in advance when reheating pre-cooked fish can be well…meh. Actually, it’s pretty easy!
I prep the uncooked fish for he client to cook in a non-messy, simple way. If they eat it day 1, they get to enjoy a fresh fish dinner. And, if they’ll be eating it another time, the fish goes directly into the freezer to be thawed and cooked when they’re ready.
Most recipes are prepped and stored in foil packets that are either baked closed or baked or broiled open. The fish has already been seasoned and sauced and often includes veggies, potatoes, etc. Some clients enjoy their fish sautéd or in a broth or stew and that works too. I do all of the up front prep and all they need to do is the final sauté or heating.
