For a healthy alternative to traditional sweet potato/yam casserole, try mashed sweet potatoes.
Boil peeled sweet potatoes until soft in lightly salted water. Strain the sweet potatoes, saving the residual water. Mash the with 1/4 cup of the boiling water adding more as you go until you’ve reached your desired consistently. You can top it off with some chopped pecans or add a little honey or brown sugar to taste for an extra hint of sweetness.
