To amp up the protein, you can always add some feta cheese, sautéed shrimp or chicken. If you’re skipping pasta, just serve the sauce over fish or chicken. And, if you’re lucky enough to have left overs, it’s not as pretty, but tastes even better day 2.

Spinach Fettuccine with Fresh Tomato Basil Sauce

Serves: 4-6
Ingredients
  • 1 lb spinach fettuccine
  • 2T olive oil
  • 8 Roma tomatoes, quartered
  • 1/2 c rough chopped basil
  • 1/4 c or more rough chopped garlic
  • 1/4 t red pepper flakes
  • Salt and pepper to taste
  • Freshly grated Parmesan for serving
Instructions
  1. Bring pasta water on to boil.
  2. Sauté garlic in olive oil in large sauté pan until it begins to brown on the edges. Add tomatoes, red pepper flakes, salt and pepper. Combine then cover and allow to cook on medium heat to break down tomatoes, about 10-15 minutes.
  3. While sauce cooks, boil pasta per package directions. Unless you’re using fresh, this should also take about 10 minutes.
  4. When pasta and sauce are both done, add chopped basil to sauce then toss with pasts and serve with freshly grated Parmesan.
